Funky Kids ~ FUNKY LUNCH


If your kids are anything like my Jake you are struggling to find something, ANYTHING, he'll eat. Thanks to Sandwich 365, a fantastic blog about nothing but, you guessed it.... SANDWICHES, I may have found something my picky eater might like. You can check out S365's post about these amazing sandwiches {HERE}.

Here are some Funky Lunch ideas I think any mom can attempt &
any kid would love to nosh on!

Chicken & Roasted Red Pepper Sandwich

Ingredients
1 Chicken Breast
1 Italian Focaccia Loaf
1 Roasted Red Pepper
1/4 C "Red Sauce" {any store bought speghetti sauce works well}
3-4 Marinated Mozzarella Balls
Spinach Leaves
Italian Seasoning
Olive Oil
Garlic Salt
Preparation
Chicken:
Season Chicken Breast with Salt & Pepper
Grill over hot coals, remove from grill & set aside
Focaccia Bread:
Slice Focaccia in half and brush with Extra Virgin Olive Oil
Sprinkle with Garlic Salt and fresh ground Italian Seasoning
Place under broiler until golden brown
Set aside

Assemble:
Spread "Red Sauce" on both sides of the Focaccia
Lay Roasted Red Pepper on bottom half of Focaccia
Place Chicken Breast on top of Roasted Red Pepper followed by Mozzarella
Broil until Mozzarella is melted
Top with more Red Sauce, Spinach & Focaccia &
PRESTO!
