What's For Dinner Tonight!

PASTA PRIMAVERA!

Ingredients:

1 box whole wheat {or regular} spaghetti

1 bunch of asparagus {cut into 3/4 inch pieces}

1 zucchini {sliced & cut into 1/4}

1-2 broccoli florets {diced}

2 fresh garlic cloves {crushed}

olive oil

1 can fire roasted tomatoes {drained & rinsed}

FRESH basil {chopped}

pecorino/romano cheese

salt & pepper

Preperation:

Cook pasta according to directions & drain

In a large deep skillet heat olive oil
Add crushed garlic, zucchini, asparagus & broccoli and salt & pepper {to taste}
Cook until broccoli is a brilliant shade of green then add the tomatoes
Drizzle small amount of olive oil on cooked pasta & toss with veggies
Sprinkle with cheese & top with fresh basil

Mr. HTB added sauteed shrimp to his.....

Simply cook the shrimp in butter, crushed garlic, salt & pepper!

What's for Dinner Tonight!

Whole Wheat Pasta Lasagna

This recipe is so simple you'll want to make it tonight!

Ingredients:

1 box whole wheat lasagna noodles

1 1/2 cans crushed tomatoes

32 oz ricotta cheese

Fresh Parsley

1 lb Ground Turkey

1 1/2 C Mozzarella Cheese

2 eggs

Garlic/Sea Salt Grinder

Olive Oil

Preperation:

In sauce pan combine crushed tomatoes, 2-3 Tbs olive oil and Garlic/Sea Salt Grinder to taste.

Brown turkey meat into small crumbles season to taste {garlic salt or garlic/sea salt grinder and pepper} & add to crushed tomatoes.

In mixing bowl combine ricotta, eggs, fresh parsley, & 1/2 of the mozzarella pepper & salt

In 9x13 baking dish coat the bottom with approx 1 cup of your sauce. Layer lasagna noodles {check the box of noodles you may NOT have to boil them prior to assembling the lasagna} followed by ricotta mixture & sauce. Repeat. Final layer will be lasagna noodles, the remaining sauce and the rest of the mozzarella cheese.

Cover with foil and bake at 350* for 45 minutes. Remove foil and bake for additional 10 minutes or until hot & bubbly. {I actually give it a couple of minutes under the broiler at the end ~ we like ours well done on top}

Let stand for 10 minutes before cutting & serving!
